Very Berry Cheesecake.
- Prep time: 30 minutes
- Cook time: 5 hours
- Total : 5 and half hours.
Crust recipe:
- Ingredients:
- 30 Graham crackers (most of Graham crackers are vegan).
- 1/2 cup of melted coconut oil.
- 1/4 coco powder.
- 1/3 agave or maple syrup.
- Instruction:
- Put Graham crackers in a plastic bag.
- Crushhhh it!!!! ( until you get these fine crumbs).
- Melt your coconut oil in microwave ( 30 sec).
- Put all ingredients in and mix well.
- You will get a sandy texture.
- Firmly press crust into bottom of prepared cake pan (Tip: use a glass cup).
- Set aside.
Filling Recipe:
- Ingredients:
- 3 cups of raw cashew, soaked at least 3 hours.
- 1/3 cup of agave syrup
- 1 lemon.
- 1 teaspoon vanilla extract.
- 3 strawberries.
- 3/4 cup melted coconut oil.
- Instructions:
- Put everything in a blender and blend well.
- Pour the filling on top of the crust you just made.
- Freeze for 5 hours.
Berry Puree:
- Ingredients:
- 6 strawberries.
- 1/4 blueberries.
- 2 dates.
- Instruction:
- Put everything in a blender and blend well.
- After 5 hours of freezing the cheesecake. Pour the puree on top and freeze for 1 more hour.
