Thai Mango and Sticky Rice.
This summer, I traveled to Bangkok, Thailand for summer vacation. They had the best mangoes ever. One of the most popular Thai dessert is mango and sticky rice. I've been craving for this dish the whole time after coming back from Thailand. Today, I will share with you this delicious dessert.
- Prep time: 5 minutes.
- Cook time: 10 minutes.
- Total time: 15 minutes.
- Ingredients:
- 1 cup sweet sticky rice.
- 1 cup water.
- 1 ripe mango.
- 1 cup coconut milk (Don't use light coconut milk. It will not taste as good).
- 2 tablespoons sugar.
- A pinch of salt.
- 1 teaspoon cornstarch.
- Instruction:
- Pour 1 cup of rice in a microwavable bowl.
- Pour 1 cup of water in the bowl.
- Cover the bowl with a plate.
- Microwave for 3 minutes.
- Take the bowl out, and stir so the rice on the bottom and top will be cooked thoroughly.
- Microwave for 3 more minutes.
- Meanwhile, pour the coconut milk in a saucepan.
- Simmer for 2 minutes under medium heat.
- Add sugar and salt.
- The rice is done. Take it out and pour 3/4 cup hot coconut milk into the rice.
- Don't worry. The rice will soak the coconut milk in.
- While waiting for the rice, cut the mango.
- Now add cornstarch in the remaining coconut milk. Simmer under low heat and stir constantly for 3 minutes.
- Serve rice with mango. Spoon the rest of coconut milk on top of the rice.
