Vegan Coconut Flan.
- Prep time: 20 minutes.
- Cook time: 2 hours ( including the time for the flans to set).
- Total time : 2 hours and 20 minutes.
- Caramel Recipe:
- Place 1/2 cup of sugar in a small saucepan over medium-low heat. Stir and melt it till golden brown. Add 4 tablespoons water. Simmer for 1 more minute till the caramel is thicken a little.
- Pour the caramel into ramekins. Set aside.
Make the custard:
- Ingredients:
- 2 1/2 cups coconut milk (full fat).
- 1/2 cup firm tofu.
- 2 tablespoons sugar
- 1 tablespoon vanilla extract.
- A pinch of salt.
- A pinch of turmeric.
- 1 teaspoon agar-agar powder.
- Instruction:
- Heat coconut milk in a saucepan over medium heat.
- Add agar-agar powder, sugar.
- Bring it to a boil and then reduce heat to low to let it simmer for 5 minutes.
- Stir constantly.
- Add turmeric powder (for color, you can leave it out if you don't have turmeric powder), salt, vanilla extract.
- Turn off the heat.
- Put tofu and the milk mixture in a blender. Blend until very smooth.
- Pour into the ramekins .
- Cover with plastic wrap and let it set in the refrigerator for 2 hours.
- Dip the ramekins in hot water to remove the flan more easily.
